Sorry I’ve been a little MIA lately guys, I’ve had some big life changes happen and I just haven’t really been feelin’ anything! But I’m back, and I’m trying to maintan a positive outlook. Also, thank you to everyone who gave me their input on my last post! I’ll make sure to keep up with the weekly and weekend recaps, and also try and throw in some fashion & DIY while I’m at it. So to start, I’m throwing it back to two weekends ago.

This was a weekend that Mark had off, and it was our “fall” weekend! what I mean by “fall” weekend is we spent the time doing some fun fall activities.

When we got there, we first went to the pumpkin patch so Mark could pick out his pumpkin (which we have yet to carve). It was beautiful and such a nice day out!

Picking apples at this orchard, you pay 13.95 for a bag, then you can fill it as full as you want! The bag looks small… but you can fit so many apples in it. I would say out of a full bag you can get 2-3 apple pies, crisps, batches of applesauce out of it! Out of this bag, I made a pretty good pie that I found here, and I also made an unhealthy applesauce recipe that I found here, and a homemade healthier recipe that I will be posting this week.

Sunday was my mom’s birthday, so her, Lindsay, Mark, and myself went to Bubba Gumps for lunch! For dessert we had the cookie and ice cream in a skillet… it’s the best one we’ve had so far.

Monday was back to work as usual, and Tuesday was our department outing! For our outing, we went glass blowing in Minneapolis, and it was SO MUCH FUN!

Here is my final creation! It was such a unique experience and I would recommend it to anyone and everyone. I was told that kids young as 9 can even do it! It is tricky, but they do it step by step with you.

Wednesday is when the big life change happened. I was laid off from my position, and it felt like my world had been turned upside down. I’ve only been in the position for a year and a half. I think I was more upset about losing the friends I made there and saw everyday than anything else! There are so many amazing people at that company, and I’m sad that I had to say goodbye. (That’s also why I went kinda MIA last week… that’s never happened to me before so I didn’t know how to deal with it!) There’s a lot of fear that comes with it, with money and whether I will find a job in time or not. However, I told myself that everything happens for a reason. There’s a reason why I don’t work there anymore. There’s a reason why I was laid off, and I’m just going to have to wait to find out why! Thursday I then spent working for Stitch Fix and working on my resume, Friday was another resume day and I helped dad with some yard work, and the weekend was filled with more part-time work and resume building. Monday & Tuesday were spent filling out applications! Wednesday I woke up and wanted a reason to feel good, so I went on a super long walk.

The town where I live is filled with trails. I’ve never gone on many of them, but I have seen them. There’s a path in my town that I love because it’s a super long stretch of good pavement that is about 2.5 miles down and back. On Wednesday, I didn’t really feel like doing a ton of cardio or anything, but I knew I wanted to do something. I decided that a walk would be a good idea and I followed a path that didn’t even exist, and I had a fantastic walk! It led to a beautiful area by a pond.

The fall colors were incredible. I can’t wait to follow the path the opposite direction!

When I got back I had a couple of over-easy eggs with a Vans whole grain waffle that had 10g of protein! They’re not eggos, but they’re still delicious.

Lunch -- Jennifer Gail Writes

Lunch consisted of a chicken caesar salad and some veggie fries!

Thursday and Friday consisted of the same applying for jobs, which leads to yesterday, Saturday! It’s Mark’s birthday weekend (kind of, his birthday is the 28th but he has to work that weekend) so we decided to do everything this weekend!

We went to Oceannaire for dinner, then I surprised him with tickets to see the I love 90’s tour! The performers were Coolio, Salt n Pepa, and VANILLA ICE! (and some others)

I also made him a SUPER delicious chocolate cake (which ended up being way bigger than I anticipated). It had a  yummy cream cheese frosting!

Today is Sunday and it’s just been a lazy day so far, with dinner planned for tonight!

  1. Love this recap! I do not love hearing you got laid off though 🙁 I’m sorry about that. But like you said, one day it will be shown to you WHY this happened. I hope you find a new job that you love!

  2. YAYAYYAYY! You are back! I was getting worried….. But we all get that. Life gets crazy crazy sometimes. That pumpkin patch looks amazing. I am really hoping to get to one with the boy soon. Also that glass blowing creation you made is gorgeous. I can’t believe that came from those little glass beads. How cool!

    Also- I am so sorry about the lay off ☹ Obviously it’s not a reflection of you but the situation, because who wouldn’t want you working for them? But regardless that is hard. Sometimes it’s the transition periods in life that are the scariest, but also the most exciting because they bring with them adventure. You are such a positive and creative individual I have no doubts that things will turn out great for you <3

    A whole grain waffle with 10g of protein?! That sounds amazing. I’m gonna have to hunt me one down.

    Oceannaire is insanely good. What did you order there? DJ had the marlin with crab cake topping the last time we were there and I swear it was one of the best seafood dishes I have ever tried. And I didn’t even order it haha.

    This past weekend we had a fancy little gala for church at Levi Stadium, which was a blast and my Aunt and Uncle visited. I will make a post soon ☺

    1. The glass blowing was awesome! You twist and bend the glass as it melts to make the colors look like that.

      I think it was 10g per 2 waffles.. but still it’s awesome. They’re Vans, and I think I got these in the frozen foods section at Target!

      I got the A La Carte swordfish and a side of truffle whipped potatoes… AMAZING. Mark has the crab crusted salmon which game with grits… also amazing. And for an appetizer we had the Crab cake! They gave Mark a free dessert free for his birthday and it was baked alaska with pumpkin ice cream in the middle. It was awesome because I’d never had my dessert on fire before haha
